How Do You Use Maple Syrup?


When most people think of maple syrup, the first thing that comes to mind is usually a stack of warm pancakes with a delicious drizzle of maple syrup. Although that is a wonderful way to enjoy syrup, maple syrup isn’t just for pancakes! This versatile and heathier sweetener can be used in a variety of ways!


  • Drizzle It Over Breakfast Favorites – Yes, pour it over those pancakes, waffles, and French toast... but have you tried it on oatmeal or yogurt?  It’s delicious!

  • Replace That White Sugar – Increase the nutritional content of your favorite recipe for muffins, cookies, and cakes by substituting refined white sugar with maple syrup or maple sugar.  There are numerous how-to guides online.

  • Glaze Those Meats and Vegetables – A bit of maple syrup toward the end of roasting adds depth to roasted vegetables, salmon, ham, and grilled chicken.

What Is Maple Syrup Grading?


If you’ve been in the maple syrup aisle at the grocery store lately, you may have noticed labels with terms like Golden, Amber, and Dark. Perhaps you recall times past when syrup was often divided into two vague groups of “Grade A” and “Grade B” syrup.  The antiquated and often confusing Grade A and Grade B version of distinguishing between syrups has largely been set aside for the now widely-accepted international grading system that labels syrup as “Golden Color, Delicate Taste”, “Amber color, Rich Taste”, and “Dark Color, Robust Taste”.   These terms accurately describe the different grades of maple syrup based on both their color and corresponding flavor.  There’s a common misconception that darker syrups are healthier for you or are made later in the year, but that’s far from the truth! All of our maple syrup is produced identically, but some days it comes out golden and some days it comes out dark. The are general trends during a sugar maker’s season, but there is nothing a producer can do to affect the color grade of a batch of syrup--it is just what the tree decides to give us during that run!


 So, other than color, what is the difference? Here’s a breakdown of the main grades of maple syrup:


1. Golden Color, Delicate Taste Maple Syrup


  • Color: Light golden

  • Flavor: Mild and delicate

  • Best For: Pancakes, waffles, yogurt, oatmeal, and as a drizzle on fruit or baked goods.


Golden syrup is the lightest of the grades. This grade is perfect for those who love a mild maple flavor and want to use syrup as a topping or in recipes where it won’t overpower other flavors.


2. Amber Color, Rich Taste Maple Syrup


  • Color: Amber, medium golden brown

  • Flavor: Rich and well-rounded, with a perfectly balanced sweetness

  • Best For: Pancakes, French toast, waffles, coffee/tea, savory dishes, or baking.


Amber syrup flavor is still light but has a more robust, balanced sweetness compared to the golden syrup. It’s an excellent choice for everyday use—whether you drizzle it over breakfast foods or use it in baking.  It’s a preferred substitute for sugar in recipes or as a flavoring agent in cookies, cakes, or muffins.


3. Dark Color, Robust Taste Maple Syrup


  • Color: Dark, rich brown

  • Flavor: Bold and hearty, with a stronger maple flavor

  • Best For: Baking, marinades, glazes, and recipes where a deeper maple flavor is desired.


Dark syrup flavor is bold and intense, making it perfect for recipes where you want the maple syrup flavor to shine through, such as glazes for meats, baked good, and sauces or marinades. It’s also a great choice to add a sweetness to beverages, such as coffees, teas, and cocktails.
